Lean, low salt meatballs

The addition of turkey reduces fat and actually adds flavor. Morton Lite Salt is a mixture of Potassium and Sodium with iodine. We use this in addition to reducing the amount used to reduce sodium in our diet. Please consult your doctor about it's use to confirm that the potassium will not interfere with medications, and be careful not to overdo it. Increase or decrease other herbs to taste.

Potato Salad

This is a home style salad with slightly reduced calories due to the reduced fat mayonnaise. The small amounts of salt, paprika, rice vinegar and mustard can be adjusted to taste, but are really essential to the overall flavor of the dish.

Ham & Red Lentil Crockpot Soup

Calorie count will vary with the amount of ham you have on your bone.

Banana Pineapple Bread (Lite)

Freeze all your overripe bananas, and thaw before making the bread. Bake at 350 for about 35-40 minutes in 2 small (3x7?) breadpans sprayed with Pam. Each loaf makes about 10 slices.

Beef & Bean Layered Enchilada Casserole

Be sure to let the casserole cool for a bit or it will be mushy and shapless. Once cooled enough you can cut it into squares and serve.

Healthy Ham & Potato Soup

Using Cauliflower to replace potatoes adds fiber and nutrients. Using lowfat or nonfat yogurt adds flavor and trims calories. You can change the ratio of white potatoes, sweet potatoes and cauliflower to change the flavor; and use vegetable broth and leave out the ham to make it vegetarian.

Recipe can be baked in individual popover cups or in a larger pan. The secret to light popovers or yorkshire pudding is having the pan and drippings very, very hot when the batter is added.

Serving size is three ounces, but you will want more if you like fish. Use boneless filet, preferably not more than 1.5 inches thick. You may save few calories using fat free sour cream, but the lower fat topping will separate (curdle).

Tomato and Vegetable Soup

You can mix and match any of the vegetables you have on hand in the herbs, onion, garlic, broth and stewed tomatoes as the base stock. You can also substitute vegetable broth and make it a vegetarian recipe.
