Veggie Pasta Casserole

This was a throw-together recipe for a potluck. I did it as a one-pan prep, first boiling the noodles and vegetables. Then while they were draining, I cooked the peppers, onions and garlic in the same pan. They were added to the draining noodles and then I used the same pan for making the sauce. Everything then was combined into the same pan to mix all together before placing in a slow cooker or casserole dish to bake with the bread crumb topping. Bake for 20 min at 350F if cooking in the oven.
Feel free to mix in whatever vegetables you have on hand: broccoli, zucchini/summer squash, etc.

Chicken lo mein / stir fry

Use whatever vegetables you have on hand for a quick throw-together meal. Frozen vegetables should be thawed first so they cook quickly.

Saw a picture of a delicious looking peanut butter smoothie here on SparkPeople, but the recipe link didn't match the picture so I decided to experiment. You could probably reduce the sugar, but I knew it would have to please my while family.

Soft Chocolate cookies

This recipe originally came from a website but I made several substitutions. The original recipe did not call for powdered sugar, but since I used extra-dark cocoa, this needed just an extra bit of sweetness. They still are not sweet cookies. I think the batter was quite a bit thinner than it should have been as these did not rise at all. Next time I may cut down the milk added.
