Quick and Easy White Chicken Chili

Easy and delicious, this white chicken chili can be a side to grilled cheese sandwich, or be the main meal. My husband likes it over 1/2 cup brown rice, topped with light sour cream and and green onions. To feed a bunch, just double the recipe!

Chicken with Mushrooms and Artichoke Hearts in Garlic White Wine Sauce

Scrumptious low calorie chicken dish - serve over pasta or rice! Have a nice cucumber-tomato salad with a smidge of olive oil and balsamic vinegar on the side.

Chicken Stuffed Eggplant

This delicious eggplant dish is savory, and filling, but not heavy, and it's a great way to use this summer vegetable.
This recipe can be made very quickly using a skillet and the microwave. The oven could be used for the final step to provide a more "roasted" and browned appearance, but either way it still tastes good! In the summer, using the microwave helps keep the kitchen cooler, and that is the way I show it in the picture. Alternatively, the eggplant could be peeled, and this recipe would make a wonderful casserole supper dish!

Using brown rice and extra lean ground beef helps make this classic stuffed bell pepper recipe extra good for you!
Substitute Ground Turkey for the beef, and save 60 calories per serving!

Goes great with a slice of whole wheat french bread and a garden side salad, and a big glass of iced tea!

Delicious 15 Bean and Turkey Sausage Soup

This 15 Bean recipe can be made with either Cajun spice pack, or the plain, with salt and pepper to taste. It can be made in a crockpot (soak beans overnight, or at least 6 hours, first), or cooked on top of the stove. Eat as a main course soup OR SERVE OVER RICE, like a true cajun would! My husband eats ALL beans over rice!

A wonderful vegetarian main dish for lunch or dinner. Or it can be served as a vegetable side dish with meat or pasta. Add sliced cucumbers and tomatoes for a complete meal.
