Easy and delicious, this white chicken chili can be a side to grilled cheese sandwich, or be the main meal. My husband likes it over 1/2 cup brown rice, topped with light sour cream and and green onions. To feed a bunch, just double the recipe!

This recipe can be made very quickly using a skillet and the microwave. The oven could be used for the final step to provide a more "roasted" and browned appearance, but either way it still tastes good! In the summer, using the microwave helps keep the kitchen cooler, and that is the way I show it in the picture. Alternatively, the eggplant could be peeled, and this recipe would make a wonderful casserole supper dish!

This 15 Bean recipe can be made with either Cajun spice pack, or the plain, with salt and pepper to taste. It can be made in a crockpot (soak beans overnight, or at least 6 hours, first), or cooked on top of the stove. Eat as a main course soup OR SERVE OVER RICE, like a true cajun would! My husband eats ALL beans over rice!
A wonderful vegetarian main dish for lunch or dinner. Or it can be served as a vegetable side dish with meat or pasta. Add sliced cucumbers and tomatoes for a complete meal.
