Making room for new appliances led me to rediscover my barely used Lean Mean Grilling Machine. I dusted it off and decided to grill up some chicken for my salad. So quick and easy--and delicious
Use ripe plantains. Yellow, almost turning black.
This came out delicious. The kids thought it was a tad spicy so next time I will cut down on the amount of pepper and ginger.
Makes 10 cups of sauce. 1/2 cup = 1 serving.
Puree canned tomatoes with onion garlic and spices.
Originally I did not include sugar in this recipe, but I find that the sugar makes the sauce taste less acidic. If you omit the sugar 1 serving=49 calories instead of 54.

This chicken makes a good salad topper.
Any white fish can be used with this recipe
Unsure of serving size, but I am guessing 1/2 cup of liquid and about 5 ozs of beef would give us six servings so that is how I calculated the nutrition info.
Serving size is half a chicken piece (approx 5 oz)
