Tuna White-Bean Salad

Easy. Yummy. Healthy. Good on crackers.

Tuscan Pantry Stew

I wanted comfort food without a lot of calories. This would be great served as a side dish or over pasta or a potato, but I just ate it like stew and it was awesome. Add some garlic if you have some - I just sprinkled garlic salt on at the end.

Summer Squash Croquettes

Weight Watchers magazine, May 1999 p. 82

Greek Veggie Salad

I was out of feta and pasta. Sad! It is still good though.

No-Bake Chewy Granola Bars

Apples 'n' Onions Spareribs

Inspired by "Farmer Boy" by Laura Ingalls Wilder. SOOO good. The vinegar and honey caramelize to make this amazing sauce.

3B Soup (Bacon, Barley, Bean)

Threw this together when I was out of about everything and it's become a go-to soup. Cheap, filling, delicious.

Beanich Sauce

My husband named this. ;) This is great over pasta, or you can just eat it on its own as a side dish - you may want to drain it first.
Minced garlic would be an OUTSTANDING addition - unfortunately my husband is allergic.

Sauerkraut Beer Bread

I've had sauerkraut bread, and I've had beer bread, but never together in one! My husband loathes sauerkraut, and said these were the best rolls I've ever made.

Delicious Homemade Pizza

Pizza Crust + Toppings

Chili Con Carne y Frijoles (1 Cup servings)

Simple chili recipe. Very little heat. Easily adaptable to crock-pot.

Shrimp Hash

I needed protein. Threw this together. Tasted pretty good over pasta.

Low-Cal Mushroom Soup

yum! Also can be made with beef broth and canned beef. I used turkey broth.

High Fiber/Protein Bread

Wheat Germ is just magical for getting numbers up in the protein category!

Fiesta Soup

I used to make Spanish Rice with essentially the same ingredients - this time I just left out the rice and added more water. It's filling and delicious!

Edited 4/17: I halved the sausage so that I could eat more soup! It reduced calories and fat quite a bit. I didn't drain it after browning - only other change.

Blueberry Buckwheat Pancakes

Whole-grain, sweet and delicious. My husband loves them!
From the Bob's Red Mill Buckwheat Flour bag...I add blueberries. 3 pancakes = one serving.

Veggie Hash

This was some kind of mistake that turned out awesome - tastes SO good and useful in so many ways.

Hi-Rise Whole Wheat Bread Machine Bread

Great adaptation of a bread machine recipe from BH&G...rises as high as white bread, doesn't taste gummy or dense. Delicious! Serving size is per ounce.

Marinated Grilled Steak

Dinner tonight. Probably went over a bit - really good!

Thai Chili Sauce "Nam Prik Pao"

This is from

- I just had this at a Thai restaurant and needed a calorie estimate for my nutrition. Not attempting to pass this off as my own - I swear!

Chicken Waldorf Salad

This is a weight watcher's recipe (turkey waldorf salad). It's 5 pts per 1 1/2 cup (yes you read it right!) serving with 1/4 c raisins - I left them out. It's REALLY good.

King Arthur Flour Honey-Whole Wheat Biscuits

These are good! They rise just as high as white-flour biscuits and are lightly sweet.

Leigh-La's Veggie Lasagna

From the 2009 Virginia Hamilton Conference Luncheon. Very delicious!

Banana Espresso Chocolate Chip Muffin

No idea if these are good, but I've heard wonderful things - my friend is making them tomorrow and I wanted to see how many calories before I ate one!

steak fajita

pretty dam' good. Use the spices you like.

Spanish Rice

This is really good, and can be made in the slow-cooker too. Just brown the sausage (use bulk sausage - I use country sausage, but any kind will work) and add it with the other ingred. in the slow-cooker - you'll probably need less water. Cook on low 8-9 hrs.

Balsamic Beef Lo Mein

Yum. Next time I'll probably up the vinegar/worcestershire sauce, but this was really good.

Pan-to-oven pork chops

Should be good. We'll see! I was out of bread crumbs

BBT (Bacon, Barley, and Tomato) Soup

This can be altered and adjusted in so many ways! Change the meat - change the veggies - change the grain - add dumplings - use whatever you have on hand.

Cabbage & Beans

It's so much better than it sounds! I don't even like beans and I love this dish
