Very Banana Bread

so easy and very yummy healthy banana bread

Light Blueberry Chocolate Chip Bran Muffins

great healthy recipe for use with fresh or frozen blueberries. (i don't like to use a ton of sugar, the original recipe called for 3/4 cup so if you like sweeter muffins beware)

Carrot Oatmeal Muffins

great low-fat snack with some fiber, protein, and a little dark chocolate of course.

Banana Cake Muffins

Really tasty and moist, adapted from a banana cake recipe to go in my 6er muffin tin. Sorry if the amounts are a bit weird since I divided the original recipe by 4. Can add icing..I enjoyed one warm from the oven with peanut butter!

Cottage Cheese Casserole (Lasagna)

great casserole that turned out to be much like lasagna! i added a can of tuna for more protein (calculated in nutritional info). 4 big, filling servings.

Beer Bread Biscuits

converted a recipe for beer bread so i could use my 6er muffin tin! these are sooo good and so easy! you can add anything to the dry mix to vary it up: for example 1/4 cup cheese.

Lemon Yogurt Muffin

taken from recipezaar. great low fat lemony muffins for the morning.

Sweet Tart Chicken

Adapted from a website about "one pot meals". The original called for different vegetables I did not have on hand, as well as pomegranate molasses (which I replaced with the lemon and honey mixture). Try adding potatoes diced up or other vegetables.

Soy Latkes/Hot Cakes

Great little snack, just the right taste of sugar and packed with a good bit of healthy soy protein.

I say latke because the granules reminded me of such...What i have here in Europe is called "soja granulat", soy granules? I assumed soy flour is similar enough when doing the nutrition info.

Carrot Date Muffin

nice healthy muffin, i added quarter cup chocolate chips which brings the calories to 110 and fat to 1.8 per muffin, which is still not bad!

Fish Casserole with Pasta

protein packed, low fat dish. can replace mushrooms and corn with any vegetables (the original recipe called for a cup of sliced zucchinni). i just used what i had and it was easy and yummy!
