This recipe has a slight cocoa taste due to the teff flour. I adapted it from "Going Wild in the Kitchen" by Leslie Cerier. I added in all purpose flour to thicken the batter a bit. I also added a bit of cocoa but you can play with many aspects of the recipe. Leave out the eggs and you have vegan pancakes. I made one 3" - 4" pancake as one serving so it's easy to take as many as you want and just add an extra serving to your daily tally.
