I wanted to use up some leftover rice and salsa.
This is a little lighter version of the ham salad my grandma used to make. She used a meat grinder, but a food processor works great.
There are a lot of other reipes for crab salad, but the chicken granules and lemon juice give this a really nice flavor. My family loves it. Serve on crackers, toast, or pita bread. This is good with pasta too. Just add 2 cups of small shell pasta.
My mother made these back in the '50s. We loved them as teenagers served with potato chips and onion dip. My family still enjoys them today.
