Strawberry Pops

These are a great treat. Also good with pineapple , raspberries or tart or sweet cherries. The kids love them too. You can cut back on the sugar with pineapple.

Almond Milk-not strained

I make this for my morning smoothies with fruit and kale. I use 1 1/4 cups per smoothie.

Basil Lime Dressing-no oil

I love this recipe... oil free and so fresh! I use this as salad dressing and also freeze it in ice cube trays. I use 2 or 3 cubes in my kale strawberry blueberry banana smoothie.

Basil Lime Dressing-Kimberly Snyder

This recipe is tweaked from Kimberly Snyder "Beauty Detox Solution". I pour this into Ice cube trays and it makes aprox. 26 cubes, then freeze them. I use 3 cubes in my Blueberry, Strawberry, Bannana, Kale smoothie. Excellent on salad of course.

Pumpkin Pie Green Smoothie

This is especially nice in the fall and winter.

Orange Creamsicle Juice

Kid Friendly... You can add kale to make it a true green smoothie, or leave it out. Either way.... it's yummy. Sometimes I add a zucchini. Who knew yam or sweet potato makes a great creamy juice?

Mean Green Juice Reboot

From the movie "Fat, Sick & Nearly Dead" with Joe Cross. I didn't think I would like this, but this mean green juice is soooo good!

Actual Nutritional Values from Reboot website: 16-20 oz serving, 125 calories, .5g fat, 64mg sodium, 1g fiber, 15g surgars, 3g protein.

Spiced Pumpkin Smoothie from Vegan Planet

Yummy Autumn breakfast or snack! This tastes like a rich eggnog. Recipe from "Vegan Planet" by Robin Robertson with a few tweaks.

Vegie Drink with apple

If you leave out the worcestershire sauce, it's raw vegan.

Mango Salad or Salsa

Mango, red bell pepper, tomato, avocado, red onion, lemon juice & balsamic vinegar. This makes a great salsa too! I love it just like this or you can add anything else you want. I eat this for lunch or dinner... but you can share!

Lemon Mousse 1/2 cup

Engine 2 Diet Book.... from the Fruit Mousse recipe. I used lemon instead and it was good too! I just eat a few spoonfuls when I have a sugar craving.

Veggie Drink-Vitamix

I juice carrots and freeze in ice cube trays, seems to make a better tasting drink. I also use a green onion instead of red for variety. You can add a chuck of hot pepper, some like it hot! You can also add lemon juice, parsley, wheatgrass juice... the combinations are endless. If you use cucumber... just be careful, it's very strong, same with celery.

Carrot Ginger Tofu Soup-Vitamix

I love this soup!! Makes about 4.5 cups total, or 2 large servings. Takes about 10 minutes to make.

Green Smoothie-Blueberry Banana Soy Yogurt Nuts & Flax

Green smoothie in Vitamix. Swiss Chard, Banana, Blueberries, Nuts, Flax & yogurt.

Butternut Yam Cream of the Harvest Soup

I don't care much for squash, but this was so rich and yummy! I tweaked it from "The Voluptuous Vegan" pg 26.
Makes about 12 cups. Each serving is apx 2 cups.
Great to freeze for later.

Creole Eggplant Black-eyed Peas & Basmati Rice

Tweaked from 150 Vegan Favorites by Jay Solomon. Mine is less spicy, but with added poblano peppers. I also added a squeeze of lemon at the end for a fresh burst of flavor.

Vegatable Curry-1 Cup servings

No meat... I don't care much for curry, but I love this!

No oil... I use this on Veggie Slaw.

Veggie Slaw

This is made like Coleslaw... only no cabbage. I top with Lemon Tarragon Dressing & sometimes half an avocado. You can also top with sunflower seeds, nuts or cooked garbanzo beans for protein. You might change it up with veggies you love.

100% Whole Grain.
1 1/2 Pound Loaf
This makes a very soft bread that will stay soft for days if you keep it out of the refrigerator. I keep the extra in the freezer, and take out a few slices at a time.
