I LOVE cream of broccoli soup, but most recipes call for butter and cream. My waist doesn't like that. ;) The low calorie recipes online were made with milk and really sounded like they'd be really runny. I want THICK and creamy! So, I dug through my cupboard and found these ingredients and decided to throw them together. The secret weapon in this is the cream of celery soup. :)
I just threw this together one day when I got home really late and needed some dinner. I ate the entire pot as a meal, but it would probably be best in servings as a side dish. :P
I just made this today with some of the food I had on hand in the fridge. It's a cold day and I was craving something warm. :)
I decided to add zucchini as a filler in this pizza's crust, so you get a little more pizza without extra calories. :)
I won't lie, this isn't going to take the place of that yummy, greasy take out pizza, but it's a healthier way to kick the craving. :)
This is another meal that I make when my husband is out of town. I was craving Shepard's Pie one night and I wanted something filling but not SUPER high in calories. I grabbed some ground beef and pulled out some veggies I had in the fridge. Of course, you could use any veggies you had on hand, but this is what I had.
This is another of the dishes I make when my husband is away. I usually half it, but it freezes well, too.
My husband works out of town alot, so I make this often. I just cut the recipe in half to make enough for one. Or I'll make the whole recipe and have the leftovers the next day.
This recipe can be easily multiplied to make enough for an entire family.
So easy. 2 ingredients. I practically live off of this stuff when my husband is out of town. lol...
I found this recipe online, though I altered it just a tad. I have the nutrition as 1 serving, but it could be split into 2 small servings.
The original calls for steel cut oats, but rolled oats makes it a quicker breakfast, as well as being something that's more likely to be in the cupboard. :)

I found a recipe online for rice pudding, and I figured it could easily be altered to be more health conscious. :) No fat, and 50 calories a serving.

SO easy!! My grandma always made these with leftover icing, after baking cakes. I didn't make the icing with shortening or butter, as my grandma did, to save fat. :)
Traditionally, croquettes are fried, but to save fat and calories, I choose to bake/broil them. :)
I altered this from a kraft foods recipe, to make it low fat. :)

I love, love, love this bread! Unfortunately, it's not the lowest in fat, since it's full of flax seed. But you do get the benefits of eating the flax seed, and it really is delicious!
Cooking time really depends on your bread machine, mine takes 3 hours.

Sorry Mom! I changed the recipe a little with low fat cream of mushroom and reduced fat sour cream.
This recipe comes out pretty thick, so feel free to add some milk if you'd like.

Okay, they're not the no-bake cookies we're all used to, but when you have a sweet tooth that just won't go away, these are a helpful alternative.
Great to make with kids!
Can also be made without powdered sugar, if you're worried about the mess.
I like to keep mine in the fridge...
When my husband is out of town on business, I try to come up with extremely simple things to make myself for dinner. This is one of them.
