Easy, Delicious and nutritious -a basic veggie soup recipe. I like to make a "vat" of it and add ingredients to individual servings - such as lentils, beans, diced chicken, brown rice, pasta, etc. for variety. Swap out veggie broth for the chicken broth for a vegetarian dish. Low fat, low sodium, Low carbs!
