Veggie Stuffed peppers

This recipe is great on it own or with a side salad. It's also good as leftovers. It makes quite a bit of sauce so i sometimes put a portion aside before adding the brown rice so i can freeze and use it with pasta another day.

Low Fat Corn Chowder

This soup is a really treat and has helped me stick to my diet on many occassions.

Portabella Pizzas

This is a really flexible recipe and you can top the mushrooms with any of your favorite pizza toppings. I use really big mushrooms as we like this meal a lot. It can easily be adapted for vegetarian or vegan diets. It leaves the most wonderful sauce on your place that is great for dipping some nice crusty whole wheat bread in. Plus leftovers make great sandwiches.

whole wheat blueberry pancakes

This recipe makes 8 small pancakes. Great with turkey bacon and maple syrup.
