I made this when I was craving apple pie. It would go great alongside oatmeal, or as a topping for whole wheat pancakes. This only makes one serving, but it can easily be quadrupled for brunch parties, etc. And it's a pretty color too! It seems a little high in fat and cals. but that's from the heart healthy walnuts.

This is a huge, hearty salad big enough for a meal! Packed with veggies and topped with chicken and salsa. It probably won't take long to throw together because most of the ingredients are from the pantry. It may seem like an odd combination, but the results are great. The high fat content is mainly due to the avocado, but it's the good kind of fat.
I love green bean casserole, but the original kind is full of fat and calories. You can use french onion soup in place of the soup mix packet if you like. This is a great substitue and works well for holidays and every day dinner.
