The name comes from the beautiful colors that the vegetables and spices give the dish. It's mildly sweet, tart and spicy flavor goes especially well with smokey main courses.
With the addition of lentils, it is a fabulous vegetarian entree.
Because the chicken is poached in veggie broth, it is almost completely fat free and very moist!
This recipe's info varies depending on what you have in you fridge :) I love it with bean sprouts and scallions too. If you use either of those, toss them in after you turn off the heat and let the residual heat warm them through.
