I omitted the tomato products from the original recipe and added 1 cup of water. I also used Light Coconut Milk.

Adapted Version of Dreenaís No-fu Love Loaf

I adapted No-fu Love Loaf from Let Them Eat Vegan. I didn't include blackstrap molasses. I changed the seasonings. I added Mrs. Dash Italian Seasoning and omitted the rest of the herbs.

I made vegan mushroom gravy to go with this. It is NOT included in this recipe.

Lemony Quinoa with Butternut Squash

The pine nuts really complement the lemon flavor, but if you decide to leave them out, you can deduct about 30 calories and 3 grams of fat per serving. I also used Wegmans Vegetable Stock which is lower in sodium than most regular vegetable stocks.

Quinoa Stuffed Peppers

Please make sure to rinse the quinoa! It has a bitter coating on it that needs to be removed. *Vegan cheese can replace the dairy cheese. Please keep in mind that the sodium in this recipe CAN be controlled based on the products you choose- ie No Salt, low sodium, etc
