Practice for the State Fair - vegetable competition
A mild curry. I added some dried sumac I had recently purchased at an ethnic market; adds just a little something extra. The seems a bit protien-heavy to me, so next time I'd probably add twice the veggies. Dip your chips or top some grilled chicken or fish!
Wonderfully cool and delicious treat; feels like cheating, but so healthy!

Not low calorie, but friends will rave and a little goes a long way!
Easy to make. Not too spicy. Lots of potassium.
Simple, nutritious and colorful meal.
Not low calorie, but no refined sugars.
