Vicky's Melizanokeftedes (eggplant patties)

This is one of my family's favorite summer recipes, and it can be served as a main or a side dish.
Patties can be broiled or fried; the choice is yours! (see cooking instructions)

Vicky's summer fruit crisp

Modified from a King Arthur recipe, to reduce the amount of sugar and the quantity of the topping. You can vary the amount of the different fruits, to achieve a total of 6-7 cups. You can also omit the plums altogether, making it a peach-and-berries dessert.
Adding a few crushed amaretti biscotti to the topping will make it even more interesting.

Vicky's Pumpkin Spice Muffins

A lightened up version of a favorite Fine Cooking recipe.
I boil, drain, and freeze pumpkin when it's abundant, to have an all-year supply.
You can also add ground ginger and/or a pinch of white pepper if you like.
You can fluff up the raisins by soaking them in lukewarm water with a dash of added cognac. Just make sure you drain them well in a strainer for 5 minutes.
