Stuffed Zucchini

This recipe is a rewrite of SP user LORIAN's recipe for Stuffed Yellow Squash!
Her recipe was so incredibly delicious, I had to try it with zucchini! Since medium zucchini are about twice the size of summer squash, I increased the amounts on the ingredients accordingly.
This recipe uses two medium-sized zucchini.
