Sinless blueberry smoothie

This blueberry smoothie recipe contains NO dairy products and is chock full of antioxidants and other good-for-you things. To cut calories further, replace pre-made tea with one green tea bag in half a cup of water. For additional nutrients, 1/4 avocado may be added.

Marinara Plus

This is a sneaky way to get your family to eat their vegetables. Add the two purees to the recipe for a full bodied thick sauce packed with anti-oxidants.

Good Stuff Casserole

This hearty casserole is reminiscent of a rich meatloaf with gravy and mashed potatoes, but has none of the carbs associated with it. I like to use fresh spinach and add extra for more fiber and flavor.

Traditional Cajun Gumbo

Please note that there are no exact measurements. This is primarily what my Cajun friend likes to call a 'clean the fridge' recipe. You use what you have on hand to make the gumbo. Any seafood can be used from clams and crawfish to oysters and tilapia. This freezes well so I make big batches in a five gallon stock pot. I make it with my own vegetable broth to cut down on salt. Regular sausage can be substituted for the andouille if you can't get it or if it's too spicy for you.

Chunky lentil soup with parmesan

This makes a nice cold weather dish or can be served if you're feeling under the weather. Rice, vegetables, and cheese make this a hearty and healthy choice. Can be served with bread and pepper to taste. Salt and calorie content can be cut by making your own vegetable broth and using reduced fat cheese and fresh tomatoes.

Low Carb Taco Salad

This low carb version of a taco salad is perfect for summer suppers. The variety of vegetables included is a perfect way to expose your family to new tastes and textures.

Taco Soup

This is a low carb soup which is filling and tasty, perfect for a hearty lunch. Supplement with a green salad or with salsa. Calories can be cut further by using low fat cheese and sour cream or scaling back the amount of cheese used. If you use fresh, homemade tomato paste it also cuts back on salt.

This low carb variant on a Middle Eastern side dish adds zest and zip to any main entree.

This is a hearty, filling comfort dish which is low in calories but big on taste. The surprising sweetness of the lentils is brought out by adding rosemary at just the right moment.

Tea steamed chicken with vegetables

A smoky dark tea or chai gives balance to the sweeter flavors of ginger and fruit juice. The longer you marinate the meat, the sharper and more satisfying the contrast.

Cheese and Potato Pierogin

Not exactly a healthy recipe, but this comfort food makes up for it by boiling the finished dumplings instead of frying them in bacon grease and it does contain fresh carrots and cabbage.

Grilled Fajita Salad (with turkey)

If you're hungry for fajitas or a taco salad but don't want the excess fat or calories, this is an excellent choice. The cabbage adds a nice crunch and provides fiber. It can also be adapted to further scale back the calories.

I put the ingredients in separate containers in the fridge and let everyone just grab and go.

Chickpea Curry

This is a very pretty, bright dish with a complex aroma and delicate flavors. It's completely meatless but can be enhanced with shredded chicken breast. Serve over rice.

Vegetarian southwestern chili

This recipe is easy to throw together; simply open the canned goods of your choice, mix them in with the spices, and allow to simmer until heated through.

I do recommend allowing it to simmer at least an hour in order for the flavors to integrate and we like to add chipotle pepper powder to ours for that smokey flavor.
