An adaptation from the Jane Brody Good Food Book. You can add whatever veggies you like. The beans were added for more protein, but you could use kidney or chickpeas too.

Stuffed Pumpkin

Based loosely on a recipe I found online. I left out the eggs and the maple syrup, and totally changed up the spices. They asked for sausage, but the store had no turkey sausage, so I did this instead. I also forgot to add the mushrooms. Just totally forgot! So add them if you've got them. And if you happen to have parsley lying around, toss that in as well.

Baked Acorn Squash with Apple Filling

Loosely based on the Moosewood Cookbook recipe, except with a whole lot less cheese and a little more spice.
