Modified from a few other keto cookies to make orange.
Used 8 oz sliced baby bellas and a container of Roland Dried Mixed mushrooms. Used the water from soaking the dried mushrooms as the stock. Used cauliflower rice to cut grains and carbs.
Added beef so hubby would eat it!
This is for a half batch. I used a smaller cookie cutter so got twice as many cookies as her recipe. I also left out the royal icing.
Used butter instead of coconut oil.

modified chicken salad
Modified for low carb from Baking Bites
My tweaks: I switched the flour, baking soda and baking powder for Carbquik to lower the carbs and increase the fiber, vegetable oil for coconut oil, erythritol for the sugar, and 1 tsp of vanilla extract and 1 tsp coconut extract to bump up the coconut flavor. Yum!!

Modified a Betty Crocker recipe using PB2 powdered Peanut Butter to lower fat and calories but still get that yummy peanut taste!
One of my favorite Lean Cuisine meals is the Chicken with Peanut Sauce. The sodium is high so I decided to try my hand at making my own. I added some Sriracha for extra kick. Pretty yummy!!
Sandra Lee made this "semi-homemade" recipe in pastry shells as an appetizer. It looked so awesome I turned it into a meal by adding some asparagus spears and cubed chicken breasts. I also used a light Alfredo sauce to cut the fat and calories. A totally filling meal under 500 calories.
Great recipe from the Stove Wave recipe book. This little thing is a great tool for quick meals!
This sauce goes great with chicken and fish - especially good with grilled salmon. I also mix this with a 1/4 cup cooked pasta, some grilled chicken strips and sugar snap peas for an awesome lunch! Calories and fat are cut significantly by using PB2 powdered peanut butter. And it is JUST as yummy!
I make the sauce for Adell's Teriyaki Pineapple Chicken Meatballs and serve over brown rice. Sweet and yummy!
Found this recipe on the Betty Crocker website. I LOVE lemon and rosemary is my favorite herb. Couldn't go wrong with this combination!
A light lunch inspired by another SparkPeople member. Added a couple extra ingredients for a yummy and healthy lunch.
From Betty Crocker....yummy! I serve with grilled red potatoes (with the same spices/lemon juice and a touch of tomato sauce) and a frozen mixed veggie.
These go great with the Mediterranean Turkey burgers and they're easy to make on the grill or in the broiler. You can lower the sodium by using a good grey sea salt (Celtic Grey is lower in sodium) instead of table salt. You can also add lots more flavor with some additional herbs. I chop some basil, rosemary, sage, whatever I can clip from my herb garden.
I found the company that makes the pyramid shaped lavender tea bags they use in Ruby Tuesdays for this drink so now I can make them at home for a fraction of the cost!
Recalculated the 15 Minute Chili recipe and a few modifications. Also changed number of servings from 4 to 8. reduce the sodium by using low sodium beans.

This has been a family favorite for years! But I've modified it a bit to lower the fat and calories. I used Ragu Light Tomato & Basil instead of marinara and you can lower the fat and calories even further by using part skim mozzarella.

This is from the Better Homes & Gardens Eat Well Lose Weight cookbook. I used fresh tomatoes instead of canned, added onion, spaghetti, and increased the chicken (my husband will never agree that four oz is a serving!)
A slight variation on my husband's old family recipe.
Same ingredients as the packets but without the massive amounts of sodium! Makes 4 servings of 2 tablespoons each.
This is great on salmon or chicken or mixed with some spaghetti and veggies like steamed broccoli and edamame. You can substitute apple cider vinegar for the rice vinegar. And the PB2 cuts the calories by more than half!
Super quick and filling. You can add additional veggies and switch to whole wheat pasta.
I combined two other members' recipes, used turkey instead of chicken, and a basil/tomato feta instead of plain. My husband doesn't ask for beef burgers anymore!
This came from RecipeZaar; the only change I made was in using fresh spinach instead of frozen and I used tomato and basil feta instead of plain. It made it sooooo tasty! Next I'm going to try this stuffing in chicken cutlets. Great served with Lemon Garlic Spinach and a brown rice pilaf with raisins.
