This is a vegan alternative to buffalo chicken dip which uses cream cheese and ranch dressing, in place of that you use silken tofu and soy milk and dry spices to make your own 'ranch dressing'. and tofu cream cheese and smart stirps "chikn" in place of real chicken.
This is a spicy vegetarian dish, can substitute veggie shreds for kraft shredded sharp cheddar and entirely omit sour cream if you don't eat dairy.
This is a healthy, low cal, individual serving of a mexican 'pizza'. For vegetarians who don't do dairy, you can always substitute kraft shredded cheddar for veggie shreds.
*NOTE* If the idea of warm guac is unappealing to you (it was to me at first but I Thought I"d give it a shot and really enjoyed) then you can make the pizza as is and dip it in guacamole after it's cooked. I like it fine either way.
I used to make my smoothies with ice, using frozen berries makes it smooth and creamy!
This is a homemade, vegetarian version of the ancho chile bbq chicken burrito from qdoba. (You can use any bbq sauce you are comfortable with, sweet baby rays has "natural flavors" which might be a problem for some veg'n people.) But I'm sure you can find a suitable substitute if it is. Also the sour cream is not necessary if you are not one who eats dairy.
Also, it says to use 'newmans own black bean and corn salsa' but I just make my own with some corn, onions, jalapenos, black beans and seasoning to taste (garlic powder, chili powder, cumin, salt, etc)
This also has almost half of the calories of the bbq chicken burrito from qdoba, so, enjoy!
