Family Spaghetti Sauce

My family's spaghetti sauce recipe included such things as prepared sauce and seasoning packets with MSG, so I decided to try and recreate it using mostly fresh ingredients. This is the result! It tastes exactly the same, to my delight, and now I can pass the recipe down to my children without fear.

Mashed Vegetables

A yummy and colorful way to sneak in your veggies. Great fun to make with kids! Those not on a Paleo or similar diet may find it a little high in fat; simply use less butter and substitute light coconut milk or another kind of milk for the coconut milk. To reduce the carbs, leave out the russet potato.

Squash-Kidney Bean Soup

This is such a warm, hearty vegan soup to have on a cold, rainy day!

Whole Wheat Blueberry Muffins

Adapted from a Betty Crocker recipe for regular muffins. Totally yummy. If you like, use less sugar.

Brown Rice, Cheddar, & Spinach Scramble

I came up with this randomly one day when there was little to eat in the house. I was surprised at how yummy it was! It's a great breakfast and a wonderful way to use leftover rice. To cut down on calories, use less or no cheese, and use a non-stick spray instead of olive oil.

Wheat-Free, Dairy-Free Oat Pancakes

I came up with this by altering a standard pancake recipe, and my sister said it's better than regular pancakes! The soy milk gives it great flavor.

Lemon Herb Quinoa

From Mirj at Recipezaar. Make sure you use dried marjoram and thyme, and not ground. XP

Oven-Fried Corn Breaded Trout

I can't have wheat, so I made a substitute for bread crumbs using corn flakes and almonds. The almonds give it a nice, bread crumb-like consistency. I also can't have milk, so I used soy milk! Wheat-free and dairy-free!
