Similar to the Cinnamon Apple Muffins but i used 2 scoops protein powder and added ginger and nutmeg to the batter.

Apple Cinnamon Mini Muffins

super simple and easy. this recipe made 21 mini muffins. I may try it with 2 scoops of protein powder but I'm happy with the stats as is. 2 g Protein and 3 g sugar.

Crust-less Mini Quiche - Chicken, Spinach, Kale

Modeled on another great recipe from "The World According to Eggface". I added alot more eggs because I guess I had too much filling but these are great.

Banana's Foster Bread

This recipe is for just the bread with out the glaze. Adapted from Cooking Light. I used vanilla greek yogurt instead of plain regular, and used whole grain flours and added chia seed.

I wanted to find a cracker I could make at home. I am seriously in love with these! This recipie was adapted from a recipie that Gormet printed, July 2008. Reduced the amount of flour and added the flax meal and the chia and flax seed to boost omega 3's and other nutrients. You can also add cheese to the mix. About 1/4 c. of Parmesan is wonderful in these.

Rice pudding with protein

As a rule, I don't normally eat white rice and my hubby doesn't like it either. He brought home some the other day and I had to figure out what to do with it. So, I decided that I'd make rice pudding.
