I came up with this because my husband loves Cabbage Rolls. But, they just took to much time. He loves it and it alot easier to make. I used whatever large can of tomatoes I have and regular rice if that's all I have. We like spices, so I always add red pepper flakes to ours. It will just take a little longer to cook and a little more liquid. It's great the next day.
This was a casserole at one time but we liked it better when the wraps had a little crunch
Found this recipe when we had more eggplant than we knew what to do with. Freezes well. I've even thrown it in the crock pot and let it cook all day.
I'm not sure where the recipe came from. But, our family has maded it for years. The calorie count does not include pita bread just the slaw. I have been know to use broccoli slaw instead of cole slaw.
