Mini Pumpkin Pies

Bake individual servings of pumpkin pie in your muffin tin!
About 150 calories, 2 grams of fiber plus good for your heart Omega 3 fats.

Good Morning Blueberry Cornmeal Pancakes

This is a whole wheat, lower fat version of the decadent pancakes found on Bakerella's blog.
Easy to make & oh so yummy for only 86 calories each!
These freeze well. Just pop in the microwave for about 15-30 seconds & serve. Finish in the toaster for a crisper texture.
Great as is but terrific when topped with some fresh sliced strawberries!

Cilantro Lime Marinated Chicken

Very simple & very tasty but you must be one who loves cilantro or this will not be the right recipe for you.
*Goes great with the Smothered Sweet Potatoes I also have listed*

Smothered Sweet Potatoes

High in fiber, protein, potassium & flavor!
These sweet potatoes are topped with a warm mix of black beans, tomatoes, green onions & seasonings. Very easy & can be made completely in the microwave.

Creamy Paprika Goulash in the Crock Pot

Creamy Paprika Goulash in the crock pot.
Very simple & suprisingly low in calories (361 w/noodles per serving).
Meat quality counts - look for lean top round & ask the butcher to run it through the tenderizer (creating 'cube steak').
*Sub low sodium tomatoes for better nutritional numbers.*

Wild Blueberry Muffins (using mix)

Need to use up a muffin mix in the cabinet? Substitute blueberry NSA applesauce for the oil to reduce the fat & calories + you add quite a bit of flavor to the batter.

High Fiber Stove Top Chicken Parmesan

My version of chicken parmesan using all bran cereal, which gives each serving 6 grams of fiber, is made on the stove top so it is perfect for the warmer weather when you do not want to turn on the oven.
