1 (16 ounce) package dry lentils (2cups)
2 (14.5 ounce) can Fire Roasted Diced Tomatoes with liquid
1 (14 ounce) can beef broth
1 carrot, chopped
1 pounds kielbasa (Polish) sausage, cut into 1/2 inch pieces
1 stalk celery, chopped

I've chosen to use Ajvar but a different Roasted Red Pepper sauce could lower the calories.
My BF and I first tasted when in Poland on vacation. It's a standard country meal and so yummy that my BF hired a Polish women in LA to teach him how to make it!
I love roasted veggies. They are low cal and really easy to make and look great when entertaining. I like to roast them at the same time I roast the chicken for dinner so it's all done together.
We love this soup! I have made modifications to reduce the calories and hopefully retain the flavor. Enjoy!
We LOVE this soup! It's so simple to make and has an absolutely gourmet look and taste to it. Great for a dinner party for a casual lunch at home.
