This amazingly tasty vegetable dish is healthy and easy to make. Enjoy it as a vegetable side, or try two servings spooned over brown rice and topped with mozzarella for a hearty vegetarian entree.
This recipe is adapted from one in Jacques Pepin's "Fast Food My Way". His recipe leaves the fruit in the shell. I found that too hard to eat, so I made some changes... This makes or a nice light desert, or breakfast fare.
