Another version of another recipe I have, this time using Bacon instead
I used Maryszoo's chicken and rice casserole recipe, however used what I had on hand. I used Italian rice (like arborio) and a can of cream of wild mushroom soup. I'm not sure how many servings it will make yet, its in the oven now and I wanted to work out the calories, so created the recipe!
Footnote - I made this at night for dinner the next night - I'm not sure if it was my choice of rice or whether it was because I made it the night before and it absorbed all the liquid - it was quite gluggy. I think I would make and eat the same night in future.
These are great to make ahead on a Sunday so they are ready to just pop into the microwave in the morning - voila - quick breakfast!
A simple bolognese sauce to go over your choice of pasta.
This is not low fat, but if you just have it on its own, its not so bad for dinner. Also, if you want to reduce the calories, don't eat the pastry!?
Sometimes you just have to let yourself relax a little on the weekends....lol
I make this soup on a Sunday afternoon and take it to work everyday for lunch, and sometimes take a half a sandwich to have with it.
A really good and filling soup full of vegetables! I know it sounds scary to add in raw chicken, however just remember to slice thinly - its like poaching the chicken when you think about it! Enjoy
