I found this recipe, an adaptation of another one, on the Angry Chicken Blog. I make these all the time - they are great frozen and reheated in the toaster.
I wanted to do a chicken & white bean chili, but I couldn't find a recipe that tempted me, so I improvised one. It came out more like a spicy soup, but I'm okay with that.
This recipe was a vegan recipe that I adapted back to a non-vegan recipe, and then tweaked again.
This is a compound of a lot of vinegar coleslaw recipes I found online. Not only do I not like mayo, I didn't want the additional fat/calories of a may dressing.

Indian inspired. Made this with leftover farm stand eggplant & squash, thrown together with some frozen cauliflower. Next time I may add lentils or coconut milk, but it was lovely this way, too.
