Southwest Scramble

This is an excellent breakfast that I have been making for a couple of years now. It tastes great and is a high source of protein and fiber, as well as low in fat.

Using only the whites of eggs cuts down the cholesterol content considerably. The sour cream is a low-cal way to make the eggs fluffier and complements the Southwest taste.
