Potato Latkes

Potato pancakes made a delicious supper topped with homemade applesauce, grated cheddar cheese, and sour cream. You can add grated carrot or sweet potato with the regular potato for a nice twist. Omit the onion, or substitute some green onions or chives or parsley - this is versatile.

Sticky Rice and Cheese

Very easy and very delicious. True comfort food. Use sushi , arborio, or regular short grain rice. Any cheese will work, such as Monterey Jack or Parmesan. Any diced or shredded vegetables could be added with the green onions at the first stage.

Raisin Cake with Coffee and Orange

The coffee gives an interesting flavour, but orange or apple juice, tea, sherry, wine, or plain water may be substituted.

Chocolate Chip Cookies

This is the Chocolate Chunk Cookie recipe from Lee Bailey's Country Desserts, 1988. I made smaller cookies than his recipe suggests so there are fewer calories to a serving. Makes 48 cookies.

Zucchini, Tomato and Sausage Casserole

Perfect for the end of summer when fresh tomatoes and zucchini are plentiful.

Buttermilk Nutmeg Pancakes

Substitute melted butter instead of the canola oil if you wish, and increase the brown sugar up to 3 tablespoons for a sweeter, richer pancake. The nutmeg is a lovely addition but may be omitted.

Blueberry Orange Cake

From the Canadian Living Summertime Cookbook Special 1983. Serve in smaller slices if you want a lower calorie count. The advantage of this flavourful cake is that it does not need ice cream or whipped cream to make it tasty, just serve it as is, or put some fresh blueberries on the side, and / or a slice of fresh orange.

Substitute types of cheese, or omit if you wish.

Baked Lemon Chicken with Garlic Rice

This is an easy, delicious dish. The chicken and rice compliment each other very well. Use well trimmed chicken thighs for the best flavour, but substitute chicken breasts if you wish. Serve with a Garden Salad (see recipe).

I do not know what is Irish about this recipe, but it was so named when given to me. To reduce calories and fat, make it a deep dish apple pie using only half the pastry. See instructions for details.

This is an easy and delicious cake that gets even moister the next day. The trick is not to over bake. Bake it in a bundt or tube pan for a cake presentation, or in 24 muffin tins for cupcakes.

Carrot Salad with Pumpkin Seeds (oil free)

A delightfully refreshing salad, so good when made with summer fresh carrots that are sweet and crisp. This is a large recipe - make it with just one pound of carrots and half a cucumber for a family dinner.

Cream Drop Scones, Raisins optional

These lovely simple scones are from Alice Waters' "The Art of Simple Food". As with any food, the secret is not to diminish the quality of the ingredients, but rather to eat small portions. Less is more!

Lemon Cornmeal Cake

Delicious: buttery and lemony, and gritty from the cornmeal. Serve with fresh peaches or other fruit and a dollop of whipped cream or low fat yogurt. A small slice is enough.

Zucchini Risotto(optional with Chicken)

This is one of the best zucchini dishes ever. Use water or vegetable stock and leave out the chicken to make it vegan.

Plum Jam Cake

I love this cake for the simplicity of its ingredients and its wonderful chewy texture. Eat it in thin slices and then the calorie and fat count is low. It keeps well, and improves after sitting a day or two.

Carrot and Potato Puree

From "Slim and Healthy Mediterranean Cooking" by Judith Wills, published in 1992. Recommended to use waxy, not floury potatoes, and to serve the puree with crusty bread and a green salad for a vegetarian meal. Serves 6 as a side dish and 4 as a main meal.
