Lots and LOTS of veggies, ground beef and more veggies. I love this soup, it's incredibly hearty and healthy and a little spicy. The only precooked thing in this soup is the vegetable juice which i'm sure you could make ahead. No canned anything!

Baked Okra (alt to fried)

I loooooooved fried okra, but fried anything just isn't good for you. This alternative was delicious. Hubby loved it too!

Easy breakfast 'Cobbler'

A guy I work with showed me this, keeps oatmeal from being the boring breakfast it can be. Nut info includes added flaxseed meal for fiber. This makes 1 serving.

Banana / Apple Waffles

Whole wheat banana and apple waffles with flax seed meal. Homemade applesauce is used as substitute for butter along with flaxseed meal. Easily frozen so you can put them in your toaster later.

Oatmeal Raisin Muffins

Found this recipe on Recipe Zaar a while back and tweaked it just a tiny bit for my taste and a little added health benefit. Healthy oatmeal raisin muffins with pecans, banana, applesauce and flaxseed meal.
