Adapted to reduce sodium. Canned reduced sodium black beans are drained, rinsed 30 seconds and soaked for 30 minutes, reducing sodium about 45%. May substitute quinoa for brown rice. Using shredded jack or cheddar cheese will increase sodium content.

Quick Seafood Pizza

I have wanted to try this dough idea for a long time. I am trying to do low sodium, which this is not particularly, in large portions. I had an open package of imitation lobster which had to be used. The oven was hot as I had made muffins. It was a Friday during Lent. I used what I had on hand.

Baby Lima and Ham Soup

Prepare a stock ahead with a leftover ham bone , 8-10 cups of water, and rough chunks of onion celery and carrot. Simmer for a couple hours and pick the meat off the bone when it cools. Strain to remove vegetables. Soak beans overnight or use quick soak method.
