Serves 8. VERY easy, really truly. I'm a total wuss in the kitchen. If this works for me it'll work for your six year old!
You can add some hot pepper to this if you like, or substitute rice vinegar for the lime juice or pineapple for the mango.
I never liked beets, but I love this recipe!

I regularly make desserts for a standing tradition pot luck among my friends (because I want to be sure there will be dessert that won't blow my diet!) So I collect as many low calorie but very tasty desserts as possible. Some are here because I plan to try them, and possibly tweak them.
