Pork Fried Rice

The recipe also calls for a small white onion to be added in the beginning and 3 green onions to be added with rice (I eliminated as I do not like onions). You can delete pork or substitute any other ingredient you wish.

Tater Tot Casserole - Gluten Free

This is a old recipe converted for my daughter who has to avoid gluten and corn.

Egg Muffins

These are easy to make and are great for breakfast on the run; meal prep or a quick healthy snack option. You can add or remove ingredients as your taste buds desire.

Peanut Butter Oatmeal Balls

These make a great, healthy snack, also known as energy balls or no-bake energy bites. You can substitute almost anything for any of the ingredients to work around food allergies, special diets, etc. Soy butter, almond butter, cashew butter, sun butter, etc. all works in place of peanut butter. You can use creamed or liquid honey. In place of the honey you can use agave nectar or maltitol syrup. If you do not like or can't eat coconut try wheat germ, granola, any type of crushed cereal, cocoa powder or whatever you like. The chocolate chips can be regular or carob or you can use raisins, cranberries, goji berries or crushed nuts. The possibilities are endless.

Egg Sausage and Cheese Muffins

These are very simple, easy and freeze well. You can make ahead and microwave individual portions as desired. You can substitute (or add) bacon, ham or along with peppers, spinach or whatever you desire (or have on hand).

Whole wheat is the best and it's very quick and easy - pick up, take home, spread out, add desired toppings and bake - YUMMY!

This is my own made up recipe. I use potatoes, frozen mixed vegetables (green beans, carrots, peas, and corn), diced tomatoes and beef broth (saved from a roast I had cooked before and froze).
