Mushroom Cheese and Vegetable Strudel Stuffing

From the November/Deccember 2008 edition of Vegetarian Times this is a recipe that originates from the Moosewood Cafe.
They recommend spooning it onto layers of phyllo, then wrapping it in the same. That's how I made it, but it could as easily be a wonderful dip, sandwich spread, or gravy-like sauce.

Saffron Shrimp Hoagies

Creamy taste of a mayonaise based salad without all the calories. This is a wonderful open faced sandwich; a treat for a summer evening or lunch with friends.


Dark as night, rocky like the moon. These chocolate drizzled banana crescents are dusted with spicy ginger and a crunch of macadamia nuts. A cold treat creamy like ice cream but without the cholesterol.

Tomato Basil Pizza

Italian inspired pizza with a kick. And each quarter of the pie comes in at just under 250 cal! Less if you use a whole wheat crust and reduced fat mozzarella instead of part skim.

A Peruvian chicken soup with vibrant flavors and colors. Rich in vegetables and lean protein. This is a soup to satisfy your hunger and leave you feeling good about what you've just consumed.
