Maude's Meat Loaf

My mother-in-law, Maude, made the best meatloaf we have ever eaten. Maude says, "I brown mine in a heavy skillet, add water as needed, cover and cook on top of stove , low to medium heat about one hour." I was concerned that her minimal ingredients would make the recipe too bland, but it is very tasty, to my surprise. Meatloaf is good comfort food isn't it?

Lower Fat Butter Cream Frosting

I was trying to find a lower fat option for frosting without losing flavor. This frosting was used on a 13X 9 inch lower- fat chocolate cake, when the cake was taken from the oven.

Regal Chicken

This recipe originally called for whip cream, olive oil, and regular swiss cheese. I substituted evaporated skim milk, spray olive oil, and 2% swiss cheese to reduce calories from over 700 to 351 per serving.
