Great base meal served over brown rice. Next day add some salsa, cumin, avocado and have amazing fajitas. Or add cream of mushroom, or Roux, and make stew/pot roast. This is a very large meal intended to be used for two different dinners. Low value is for two smaller meals, high value could be 3 big meals.
This was an experiment gone wrong, that turned out really nicely. I had intended to use 1/2 cup of the quinoa, but the whole batch I had cooked fell in with the turkey, so I went with it. The kids LOVED finding quinoa in their meatloaf muffins, the texture mimics ground turkey so you barely notice it is in there.
This is great served in a burrito, over brown rice, over a salad, with black beans, pretty much any way you like to have it.
This is my version of a dish I had at Lucy's Grill in Kailua. HI. It is a work in progress and I would love your suggestions.
