Ken's Greek shrimp, tomatoes, cucumber, artichokes

A very yummy one pot meal, shrimp with tomatoes is routinely served in many Greek taverns at lunch time. This recipe is based on that with additions of cucumber and artichoke hearts. It is best served over wild rice.

Ken's New World Hummus

This Heavenly Hummus is the best of all worlds, new & old. Great with no fat Pita, or Low sodium Ezekiel Bread, or crudites, etc. Mild heat from the radishes and Louisiana Hot Sauce give it a nice kick and can be scaled up or down as desired. Healthy and great tasting, it doesn't get any better than this.

Ken's Avacado Mango Coconut Shrimp

A tropical delight for a winters day or night.

Low sodium, high potassium, moderate carbs & protein, also high in manganese, vitamin C, and selenium. 6 Grams of fiber too.

For those who are not yet familiar with Coconut Oil, it is even better for you than olive oil and promotes fat burning!.

Ken's Quick & Easy Eggs Florentine

Like Mom always said, "breakfast is the most important meal of the day". If you're like many people (myself included) that haven't been getting enough protein, eggs may be just what you need.

In order to keep it healthy at breakfast, It's hard to beat poached eggs because they can be cooked without fats of any kind. Add a lower cal, higher fiber English muffin split in half to put the eggs on (no butter,etc) and your on the way to revving up your metabolism early in the day. Top this off with some leaf spinach and you have good things going down the hatch. Don't forget the Turkey Bacon either.

Ken's classic Greek chicken, zucchini, & tomatoes

To me, Greek food is both heavenly and earthy at the same time. What Greek garden doesn't contain zucchini & tomatoes in the summer time? Answer : NONE.

Created along the lines of braised lamb shanks in tomato sauce, this little recipe is a one pot summer time meal delight likely to become a favorite of yours too.
