My dad loved slow cooking meals and used his crock pot often. He would make this on Sundays and take the leftovers to work for lunch during the week.
A simple comfort food. My grandma used to make it full fat and salt, but I adapted her recipe into a healthier version for my husband and I. This is a small casserole but you can easily adjust the ingredients in order to feed a larger family.
My mother gave me this recipe because she knows how much I adore pumpkin. You can substitute 1/2 teaspoon cinnamon plus 1/4 teaspoon ginger and 1/8 teaspoon EACH nutmeg and cloves can be substituted for 1 teaspoon pumpkin pie spice.
