Parmesan-Herb Bread

Tips: These loaves tend to spread while baking. For taller loaves, use a baguette pan. You can vary the flavor by using provolone, Asiago, Romano, or sharp cheddar cheeses. To save time, make the dough in a food processor or bread machine. After baking, let the bread completely cool, then wrap tightly in foil and freeze. Thaw at room temperature, and reheat at 300 for 20 minutes.

Roasted chicken breast parmesan

Quick and easy meal and very moist.

Mediterranean Spaghetti with Scallops and Brussel Sprouts

Great for a Friday night company dinner. Light with bright colored Vegtables adds to a sea food dish that isn't fried.

Mediterranean Pasta Salad

A great go to easy salad that can be the main course.

Italian chicken Tortellini Soup

A simple light soup that feeds a large group, 24 2-cup servings

Ruth's 14 bean soup

This is a very hearty winter soup. Put it on, go to work and come home to a hearty meal. This starts out as a 15 bean soup mix, but I'm allergic to green peas so all of the split green peas have been removed when I make it. One serving is 1 cup.

Pasta salad, one cup serving, by Ruth

At work one of the nurses made this salad. I tried to make it like her's. One serving is one packed cup.

Ruth's Chicken Vegetable Soup

I made up this recipe to use up some vegetables I had on hand and some chicken that was on sale. Don likes it hotter so he adds more of the hot pepper oil and a little more salt. The soup has a slightly sweet taste with a mild hot finish.

Don's Spaghetti Sauce

Not only did Don steal my heart with his blue eyes but he also stole my stomach and taste buds with this sauce. It feeds a crowd and also freezes well.

Turkey Tetrazzini

I had some left over Turkey Breasts, cooked spagetti and this Goat Cheese Mushroom dip by Stonemill kitchens, so I decided to make a slightly different version of Tetrazzini.
