I LOVE NACHOS AND I LOVE PITA CHIPS AND THE MORE MEDITERANIAN FOODS TOO. SO I JUST TOPPED A SERVING OF PITA CHIPS WITH WHAT I HAD AROUND THAT I LOVE! I USED THE SWEET RED PEPPER CANNED AND PACKED IN WATER.
DH HAS BEEN MAKING CHILI FOR YEARS, THIS IS HIS MOST RECENT RECIPE THAT'S ACTUALLY GOOD!
I MODIFIED AN OLD RECIPE USING RICOTTA IN PLACE OF THE SOUR CREAM. I ADD THE MUSHROOMS AT THE END SO THEY AREN'T OVER COOKED.
I GOT THIS RECIPE FROM AN OLD NATURAL FOODS COOK BOOK I'VE HAD OVER 30 YEARS. IT'S GOOD AND NUTRICIOUS.

I PRESS THE MEAT INTO A ROUND PIZZA PAN AND BEGIN COOKING AT 425* WHILE I PREPARE THE CHOPPED VEGETABLES.

BOIL RED POTATOES RAW AND KEEP THE SKINS ON. COOL AND CHOP FOR SALAD. PAR BOIL CHOPPED CELERY AND COOL ( I PUT THE DICED CELERY IN A SMALL BOWL WITH A LITTLE WATER AND MICROWAVE ABOUT A MINUTE).

I JUST COPY AND PASTED THE DIRECTIONS BUT THAT WILL BE A LITTLE DIFFERENT BECAUSE I USED PRECOOKED TURKEY BACON AND GROUND TURKEY.
I LOVE THE GRILLED VEGETABLE SALAD AT LONGHORN STEAKHOUSE SO I TRIED COPPYING IT AND IT TURNED OUT GREAT! THIS MAKES 2 GREAT SALADS!
I SUBSTITUTED SKIM MILK FOR 1% AND EGG SUBSTITUTE FOR 2 WHOLE EGGS SINCE I HAVE TO REDUCE FAT FOR MYSELF BUT THE ZONE DIET USES THE WHOLE EGGS AND 1% MILK. I ALSO SUBSTITUTED CANOLA FOR OLIVE OIL BECAUSE I THOUGHT IT SOUNDED BETTER FOR BREAKFAST PANCAKES.
I'M USING THIS DIET WITH THE SPARK TO KEEP MY INSULIN DOWN WITH IN THE ZONE.
PUT VEGETABLES IN STOCK RAW WITH CHICKEN.
COOK RICE AND ADD TO SOUP WHEN VEGE ARE COOKED THRU.
I MAKE THIS IN THE SLOW COOKER AND ADD COOK RICE THEN ADD TO SOUP WHEN VEGETABLES ARE COOKED THROUGH
I CUT THIS RECIPE IN 1/2 AND LOWERED THE FAT. I ALSO USED SPLENDA BLEND INSTEAD OF SUGAR.
IT ONLY INCREASED THE CALORIES BY 2.4 BUT USING THE SPLENDA BLEND REDUCED THE SUGAR AND INCREASES THE PROTEIN BY USING WHOLE GRAIN FLOUR

I SOFTEN THE CHEESE IN THE MICROWAVE ON THAW, I DO THE SAME WITH THE FRUIT SPREAD. THIS IS VERY GOOD AND WILL BE GREAT ON TOAST TOO!

DRAIN CANNED YAMS (IT TAKES 1 1/2 SMALL 15 oz CANS)
THIS IS LOW FAT BECAUSE I USE REGULAR PIE CRUST
I USE REFRIGERATOR CRUST BECAUSE I DON'T MAKE VERY GOOD CRUST. IF YOU CAN FIND A REDUCED FAT PIE CRUST LET ME KNOW!
BOIL WATER TO MAKE 5 SERVINGS OF GRITS MINUS 1/2 CUP (GRITS SHOULD BE A LITTLE THICK).
EMPTY GRITS INTO A SMALL MIXING BOWL ADD WATER AND GARLIC POWDER AND STIR.
OPEN THE TAMALES AND POUR THE SAUSE INTO THE GRITS MIXTURE.
ADD 3/4 CUP OF SHREDDED CHEESE AND MIX INTO THE GRITS.
I DIVIDE GRITS INTO 3 SMALL PYREX CASSAROLES SPRAYED WITH COOKING SPRAY SO I CAN HAVE THIS ON 3 SEPERATE OCCASIONS. OR YOU CAN PUT MIXTURE INTO A PYREX LOAF PAN SPRAYED WITH COOKING SPRAY. FOR SMALL CASSAROLES, BREAK TAMALE IN 1/2 AND PUSH VERTICALLY DOWN INTO THE GRITS SO JUST THE OPEN TOP OF THE GRITS MIXTURE.
SPRINKLE A LITTLE EXTRA SHREDDED CHEESE ON TOP (MAY BE ADDED LAST FEW MINUTES OF BAKING, I LIKE IT CRISPY).
YOU MAY FREEZE THE EXTRA SMALL CASSAROLES UNCOOKED BUT COVER TIGHTLY. BAKE ABOUT 375* TO 400* LONG ENOUGH TO HEAT THRU AND MAKE CHEESE BUBBLY.
PREHEAT OVEN TO 400*. COAT BAKING PAN WITH COOKING SPRAY.
COMBINE OATS, PECANS AND SEASONING IN A RESEALABLE PLASTIC BAG; SEAL AND SHAKE WELL.
MIX MILK AND EGG WHITE IN A SHALLOW BOWL. DIP FILLETS INTO EGG WHITE MIXTURE. PLACE TROUT IN THE BAG AND SHAKE UNTIL WELL COATED WITH OAT MIXTURE.
PLACE TROUT IN THE PAN AND BAKE FOR 10-12 MINUTES AND SERVE WITH DARK LEAFY GREENS.
SPRAY THE CROCKPOT WITH COOKING SPRAY
SOFTEN THE CREAM CHEESE IN THE MICROWAVE FOR 1/4 LB AND STIR INTO 1/2 CAN OF CREAM OF SOUP (WHICH EVER FLAVOR YOU PREFER). PLACE CHICKEN BREASTS IN THE BOTTOM OF THE CROCK POT AND SEASON TO TASTE. POUR SOUP/CEAM CHEESE MIXTURE OVER THIS .
CHOP THE ONION AND GREEN PEPPER INTO LARGE CHUNKS AND 1/2 THE MUSHROOMS. ADD THE VEGETABLES THE LAST COUPLE OF HOURS OF COOKING TIME SO THEY WILL NOT OVER COOK.
TURN THE CROCK POT ON LOW AND COOK UNTIL DONE.
1 GARLIC CLOVE MINCED
1 TSP EVOO
2 TSP LEMON JUICE
2 TSP LIGHT MAYONAISE
1/4 TSP WORCESTERSHIRE SAUCE
DASH OF BLACK PEPPER
PARMESAN ROMANO GRATED 1 TBSP
1/4 CUP SOFT BREAD CRUMBS
PREHEAT OVEN TO 350*
SPRAY CASSARLOLE DISH WITH COOKING SPRAY.
** IF YOU WANT TO SUBSTITUTE USE 2 SLICES OF REDUCED CALORIE WHEAT BREAD (57 grams).DICE BREAD AND PLACE IN THE BOTTOM OF A SMALL CASSAROLE DISH.)
SPRAY A SMALL CASSAROLE DISH AND POUR INGREDIENTS INTO THE DISH.
BAKE FOR 45 - 50 MINUTES OR UNTIL A KNIFE INSERTED IN THE CENTER COMES OUT CLEAN
MIX UP SALAD DRESSING AND POUR OVER THE ASSEMBLED SALAD. GREAT FOR HEALTHY FATS!
