This is what I actually made when adapting the Black Bean and Corn Couscous Salad I found on here. I wasn't sure of the serving sizes on that one so I had to input my own. This uses whole wheat couscous instead and my seasoning. I'd still like to try it with jalapeno. My man even said he'd be fine being vegetarian with just this!
I came up with this recipe after looking at several other recipes. I couldn't find the actual peanut sauce I used and couldn't remember the name off hand, but it did have a little spice to it. Some people might like to add cayenne pepper or a little chili sauce. Also, I might try it with crushed, toasted peanuts. I made this for a group of friends and they immediately wanted the recipe. I eyeballed a lot of things, so make sure to adjust to your tastes.
