This is a very good dressing. Almost like a caesar dressing, but not quite. (You can add anchovies & fresh shaved parmesan if you like)
Use only fresh squeezed lemon juice. The bottled variety is too bitter.

Zucchini& Yellow Squash Italiano

This is a great way to use up your extra zucchini & yellow squash from the garden. It can be used as a side, over pasta or you can add fish, chicken or seafood to the top & let poach til' done.

This is super quick & easy to make. It's a touch on the spicy side. The aroma is fantastic. To make this a vegetarian dish use vegetable stock in place of the chicken stock.

I used this sauce on anything from pasta, fish, chicken or vegetables. It's not overly spicy, but enough if you want a kick! To make it spicier, just add another Jalapeno pepper!
