Roasted Butternut Squash Soup

Roast squash and onion with salt & pepper & a few short sprays of coconut oil until cooked (soft but not mushy), turning once during cooking. Puree with broth of choice while still hot until desired consistency. You can also use coconut milk for more of a bisque.
