A simple lower-fat twist on eggs benedict traditionally served with a fruit salad. Fiber, protein, and decadent rich yolk combine with a bit of cheese to make this a perfect breakfast (or lunch or dinner) for the active Sparkler!
This is apple pear blueberry crisp with a crunchy crust and a streusel topping. I made it with real butter and brown sugar though it could easily be made a bit lower in fat and sugar by reducing these. Substitutions could also be made by using almond meal and wheat germ in place of whole wheat flour and it would still be tasty! Enjoy!
I have used this recipe since I found it in Family Circle in November 1996! High fiber, high protein, perfect on a brisk fall day or a chilly winter lunch! And the topping makes it seem naughty! I calculated this at 8 servings because that's what the original used.
This is one of those, "Hmmmm, what do I have in the kitchen?" type meals that turned out to be pretty tasty and healthy. And better yet, CHEAP!
