A forgiving recipe, you need only rice and stock. Then throw whatever is in the pantry and fridge. Tasty and even better the next day.

Saucy Creamy chicken

Change the ingredients to suit your tastes. Add chilli, more cream, evaporated milk or yogurt. For a big eater add more chicken

Curried Coconut Rice Salad

A tasty rice salad packed with veges. Other ingredients can be added - sultana, coconut, soft fruit (mango).

Mac n cheese with leftover meat

This can easily be adapted for low fat preferences. Use any leftover meat.

Spicy Root and Lentil Curry

This recipe was found on the web ages ago, sorry I cannot name the author.

Adjust seasoning to suit your curry taste and vegetables in season. Potato's have high calories so I try to keep this vegetable to one cup.

Home made fruit salad

My breakfast staple with 100gr/3.5 oz yoghurt (148 cals) or dessert with 2 chopped jumbo marshmellows and a teaspoon of choc chips (166 cals)

It is winter here and cold. Cravings for home baking and comfort food have set in. This pudding is a generous 6 servings.
