A lower fat, lower carb version of pasta alfredo!
Cacciatore means "hunter-style"- here's a vegetarian version of an Italian classic. From the South Beach Diet cookbook.
Bowtie pasta loaded with mushrooms, fresh spinach, and cheese in a rich mushroom gravy. 4 POINTSŪ per serving
Vegan and all veggies! Adapted from the recipe in Vegan with a Vengeance.
Serve over cooked brown rice. Sea scallops can be substituted for the shrimp as well. 5 POINTSŪ per serving.
Equally tasty, and way less fattening than boxed mac, this also has lots of fiber from the yummy broccoli florets. Try it with the cauliflower variety, too.
Much lower in fat and sugar than it's traditional cousin, these cabbage rolls are still so full of sweet and savory flavors, picky eaters won't even notice! They're special enough for the holidays, and still really good for you.

Black beans and quinoa provide plenty of protein- no fake meat needed! I really like these served with seasoned sweet potato fries.
All the tasty flavors of classic lox, but MUCH lower in fat and calories. Quick to prepare, travels well, and is also nice for a light lunch.

Combing ricotta with mashed firm tofu helps keep these tasty pasta rolls low fat without sacrificing texture. Rolls instead of layers makes serving and storing leftovers a snap. 7 Points per serving (about 2 rolls) for anyone whose counting!
