Sweet n Savory Quiche

This Quiche fits PALEO diets - no sweetener despite the name. It is from I was a little hesitant when I saw cocoa powder and cinnamon being mixed with ground beef but this is FANTASTIC, and gets better the second day

Chicken in Rich & Creamy Sun Dried Tomato Gravy

From Mom Foodie at A gluten-free, flour free delicious sun dried tomato sauce makes this light chicken dish delish.

Judy's Turkey spinach Tomato frittata

Actually I wasn't sure whether to call this a crustless low fat quiche or a frittata or something else - basically an egg and veggie pie that can be cooked ahead for grab and go breakfasts throughout the week

cashew chicken

A light cashew chicken lightly spiced with plenty of vegetables - serve over rice, rice noodles, soba noodles...

Judys Egg Spinach and Bacon Muffins

An omelet to go. Omelets baked in muffin pans so that you can "grab, microwave and go"

Judys Crockpot Beef Stew

Easy Stew to Come Home to on a Cold Winter Night - and the house will smell fantastic

Judy's Maple Balsamic Dressing

Simple Balsamic Dressing that's high in Omega 3's

tomato, cucumber, avocado salad w pine nuts

Created this to change up my lunch salad and OMG I love it. Next time may toast the pine nuts and maybe add a little parsley or basil or maybe not cuz like I said "Luv it!". I listed as vegetarian but it's also vegan, gluten free, low carb and diabetic friendly.

Chickpea Salad

I tried this at a local market that sells a variety of foods that they prepare - this is my work in progress version - I still don't have it quite right but it tastes good and almost any type of bean works in it. added bonus - the vinegar (or maybe the parsley) seems to prevent the unpleasant after effects of the beans (at least for me).

Chocolate Chip, Oatmeal and Bean Cookies -

This recipe is from I had found and successfully fed my family a chocolate bean cake and wondered if there was a bean cookie that they might eat. Turns out that this is pretty traditional as far as ingredients go but at least these cookies have some nutritional value.

I cut the brown sugar back to 1 cup and the cookies were still sweet enough. Next time I may try cutting back on butter (maybe by cooking my own beans and adding the equivalent of 1 1/2 cans worth and no butter)

High Fiber Chocolate Cake with a Protein Punch

I know this is going to sound incredibly weird but this recipe makes a tasty cake using beans, eggs, chocolate and baking soda - you can add a little sweetener if you wish but as I have radically cut back processed sugars in my diet I find it perfect with just the sweetness of the semisweet chocolate. Sorry for the metric measurements - I got this from Pinterest and since the beans I used had started as dry beans, I used my food scale. I'm guessing that 200g is close to what you would get if you drained a can of beans.

Judy's Crustless Quiche w Turkey Crumbles

A light quiche that tastes like a splurge

Judys Alkaline Soup for Good Health

Supposedly the body does best at a slightly alkaline level. This soup is filled with ingredients which are supposed to be alkaline (to the body lemons which we know to be acidic are alkaline - same with tomatoes)

Judy's Ham & Cheese Quiche

A good quick way to have a hardy breakfast on hand. Make, cut and store in individual servings. On a rushed morning, just grab one, microwave for a minute and you're good to go. This is also fairly low carb as there is no crust.

Judys Quich with Morningstar Maple Sausage

A low carb crustless quiche dish to have on hand for easy morning warm up.

Avocado-Mango salad

A delightful Mexican trip for your palatte. Buttery Avocado and Mango topped with a Chile lime dressing and served over bibb lettuce. Bacon, toasted pumpkin seeds and gorgonzola are an added taste treat.

Crustless Vegetable Quiche

A filling breakfast that will hold you for hours - much lighter than traditional quiche

Judy's Vegetable Soup - basic

An easy vegetable soup - low in sodium, high in vitamins. Can easily add other veggies on hand - fresh, frozen or canned although watch the sodium in canned.
